Fu Yung Hai (Versi All in 1). With Chinese New Year celebrations coming up, I was reminded of a dish I grew up with: Fu Yung Hai (also known as Egg Fu Yung in the US). This delicious omelette came from the Indonesian Chinese people or Peranakan Chinese; a sub-ethnic group defined by their genealogical descent from the first waves of Chinese settlers in the Malay Peninsula and Indonesian Archipelago. Fu yung hai is very popular Chinese Indonesian cuisine in which in Chinese known as Egg foo young. Literally meaning "lotus egg', it made from eggs and often minced ham and with various vegetables as bean sprout, bamboo shoots, cabbage, spring onions, mushroom and water chestnut. In Chinese Indonesian cuisine Egg Fu Yung is well known as Fu yung hai, or sometimes spelled as Pu yung hai, the ingredients of the omelette usually made from the mixture of vegetables such as carrots, bean sprouts and cabbages, mixed with meats such as crab meat, shrimp or minced chicken. - Siapkan 4 buah of telur.
- Siapkan 2 sdm of tepung terigu.
- Siapkan 2 sdm of tepung beras (wajib).
- Sediakan of Sayuran:.
- Diperlukan 3 lembar of kol, iris tipis.
- Dibutuhkan 1/2 buah of tomat, potong kotak.
- Dibutuhkan 1/2 buah of wortel, potong korek.
- Diperlukan of Bumbu:.
- Sediakan 2 siung of bawang putih, cincang.
- Gunakan 4 siung of bawang merah, iris.
- Dibutuhkan 1/4 siung of bawang bombay, iris.
- Dibutuhkan 1 sdt of gula.
- Gunakan 1 sdt of garam.
- Dibutuhkan 1/2 sdt of kaldu jamur.
- Diperlukan Secukupnya of merica.

- Siapkan 2 siung of bawang putih, cincang.
- Sediakan 3 siung of bawang merah, iris.
- Dibutuhkan 1/4 siung of bawang bombay, iris.
- Diperlukan 1/2 buah of tomat, potong kotak.
- Dibutuhkan 1/2 buah of wortel, potong korek.
- Dibutuhkan 3 sdm of saus tomat.
- Sediakan 1 sdm of saus tiram.
- Sediakan 1 sdm of kecap asin.
- Diperlukan 1 sdm of gula.
- Diperlukan 1 sdt of garam.
- Diperlukan 1/2 sdt of kaldu jamur.
- Sediakan 5-6 sdm of air.
The dish is served in sweet and sour sauce with peas. Fu Yung Hai is a Peranakan (Indonesian Chinese) intake of Egg Foo Young. It was brought by Chinese migrants long before European settlements arrived in Nusantara. No wonder, the Dutch knows this dish as Fu Yung Hai as well.
Cara memasak Fu Yung Hai (Versi All in 1)
- Siapkan semua bahan sesuai instruksi di atas.
- Campurkan tepung terigu dan beras ke telur lalu aduk rata.
- Lalu campurkan bahan bumbu serta sayuran, aduk rata. Siapkan wajan berisi minyak yg agak banyak, lalu setelah agak panas, tuang dan diamkan dgn api sedang. Balikkan setelah sisi yg di goreng sudah set (jika susah belah 2 baru balikkan karena tekstur agak tebal). Setelah itu angkat dan sisihkan.
- Dgn wajan yg sama, tumis bawang putih dan merah sampai harum, lalu masukkan wortel dan bombay serta bahan saus lainnya.
- Tumis hingga layu baru masukkan bahan saus (saya sudah jadikan 1 supaya mudah). Kali ini saya ngga pake maizena karena sudah dpt tekstur yg cukup oke. Cicipi rasa ya..

From its name, the dish should contain crab meat as Hai means Crab in Chinese (correct me if I'm wrong). The name comes from the Cantonese language.
